Today I will share with you the recipe for Aletria, a kind of Sweet Rice done with angel hair (fine egg noodles), but harder in consistency, so that it can be sliced and eaten with the hands.
Ingredients
500 g angel hair (fine egg noodles)
2 l milk
4 egg yolks
1 cinnamon stick
1 lemon's rind
sugar -> up to you!
Preparation
. Pour the milk into a large pan with the cinnamon stick, the rind of a lemon and the salt.
. Bring it to boil while stirring constantly.
. Add the noodles, after breaking them into little pieces, and lower the heat.
. The constant stirring will keep the noodles from sticking.
. At a low heat, allow the mixture to achieve a pudding consistency and add milk in case it gets too hard.
. When the noodles have cooked add the sugar and keep on stirring.
. Remove the cinnamon stick and the lemon's rind.
. Add the beaten egg yolks and mix them quickly until they have been evenly distributed.
. Pour it into a platte and decorate it with ground cinnamon.
